Pascal Bouchard is an independent family producer situated in the heart of Chablis, with over one hundred years of wine making experience. They own over 32 hectares of vines that cover Regional to Grand Cru appellation. The most famous of white Burgundy, Chablis wines are made from the Chardonnay grape. Many see this cool climate district as the best in the world for white wine production. These bone-dry wines have good acidity, with refreshing citrus flavours and hints of green fruit. Many also show fascinating minerality with a smoky, flinty signature. Although oak may be used, it is almost always very restrained, only imparting a very subtle richness.

Concentrated flavours of cherries, plums, spices, in a powerful, rich style with firm, but not grippy tannins. A great example of the simplicity and up-front approachable character that is Wither Hills pinot and a wine that looked to be right at its peak. This has a brambly, cherry nose light spicy elements, dried red fruits and gentle tarry notes. The palate is a simple sweep of red velvety tannins, which travel smooth and easy through the finish.
